Fajita Pasta Recipe
This recipe is my own take on a fajita pasta! It was my first time trying it and took inspiration from other recipes online. I don’t really like cheese so I didn’t add any, but you can add as much as you like which will make it so creamy. Let me know if you try it by tagging me on Instagram @kaegoskitchen.
This recipe serves 2.
Ingredients:
- 2 tablespoons of oil, I use sunflower
- 1 onion, diced
- 1 bell pepper, diced
- Half a pack of cooked frozen prawns
- 1 pack of fajita seasoning
- 1 can of black beans, drained and rinsed
- 4 handfuls of dry pasta ~ 100g I think 😅
- Salt and pepper, to taste
- Cheese, optional
Method:
Step 1: dice the onion and bell pepper and fry in some oil
until soft, season with salt and pepper
Step 2: meanwhile, boil your pasta according to pack
instructions. I used brown pasta and cooked it for about 13 minutes
Step 3: add the frozen prawns, black beans and half of the
fajita seasoning to the onion and pepper mix. Leave this to cook for about 10
minutes. You might need a drop of water if it starts to catch.
Step 4: drain your pasta, saving about a cup of the pasta
water. And add the pasta and pasta water to the prawn veg mix.
Step 5: add the rest of the packet of the fajita seasoning
and stir well to mix it all in. Leave it on low for a couple of minutes for all
the flavours to come out.
Step 6: add cheese and stir it in if you want to but if not then turn off
the heat and dish it up!
It was very tasty and I'll have to try a creamy version where cream and cheese at one point too.
