One pot tomato pasta recipe

This easy pasta recipe is perfect for midweek dinners! It’s
quick, easy to prep and it all goes in one pot so there’s minimal washing up. This
recipe is adapted from here. I changed it a bit based on the ingredients
I had on hand and love the richness the passata added.
Ingredients:
- 1 onion, diced
- 2 carrots, diced
- 500ml passata
- 250ml water
- 250g pasta of your choice, I’d avoid a noodle style pasta as it'll probably stick together.
- 1 tin of mixed beans, drained
- Stock cube
- Tablespoon of sunflower oil
- Salt and pepper, garlic powder
Method:
- Fry the onion and carrots for 5-6 minutes until softened.
- Add the pasta, passata, water, mixed beans, and stock cube to the pot and bring to the boil.
- Leave to boil with the lid on for 11-13 minutes until the pasta is cooked, stir occasionally to stop it all sticking together.
- Reduce the heat and take the lid off, letting the sauce thicken for a minute or 2. Season to taste.
- Serve immediately or once cooled, store in the fridge for 4 – 5 days.
I served mine with corn on the cob for some colour and
crunch!
